“Do You Know the Way to San Jose?”

Its 4:45am as I wipe the crust off my sockets and prep before we head to LAX for our 2-day trip to San Jos-EE.  I attended San Jose State University (SJSU) from 1991-1993 to complete my bachelor’s degree in Journalism.  My last visit to San Jose was in 2002 when I briefly visited a friend in San Jose for the purposes of a Napa wine tasting trip.  We only had time for a five minute drive around part of the downtown area before he dropped me off at the airport.

We fly out of Orange County’s John Wayne Airport on a red-eye flight.  Attempting to snore should prove “delicious” as I’ll be wearing a cervical collar.  A very pleasant woman in a Volvo (a.k.a. “tank”) rear-ended my car while I was stopped at a traffic light last week.  Continue reading →

Smoking: Beef back ribs…

For my next foray into smoking I chose to “try” beef back ribs.  You will typically find that you are unable to find these fresh and will have to settle for frozen.  I would suggest heading to a neighborhood butcher shop as you will likely find what you are looking for and at a better quality than your average grocery store. David’s Foray Into “Smoking”…

Greetings All,

Here are some pictures of some baby back ribs I cooked in my new smoker.  I used an under $100 upright capsule style Brinkmann smoker.  I am a complete amateur so I visited various sites (doubledanger.com, fabulousfoods.com, smoker-cooking.com, the-greatest-barbecue-recipes.com) to learn how to smoke meats and then put it to the test on smoking some salmon.
